The one advantage rice has over cauliflower is the price; cauliflower will tend to cost you a bit more. However, if you're seeking ways to make more low carb dishes, this is one nutritious option. If your diet is high in processed foods, try switching to more natural foods. People who are in the habit of eating fast foods and packaged foods have an especially hard time reducing the carbs in their diet. There are foods that are marked "low carb," but these are also processed foods that aren't really a satisfactory answer. The problem with most of these low carb processed meals is that they make you want to eat more carbohydrates, so you're tempted to abandon your diet. When you eat natural foods, by contrast, you won't feel that craving for more carbs, as your body will be better nourished. Many diet foods are artificially sweetened, which can cause mood swings and energy crashes; instead, try fresh fruits or some protein rich nuts.

You can't go wrong eating whole grains, as these are one of the building blocks for a healthy diet. This is particularly true if you're trying to live off of a low carbohydrate diet. These are the the healthy, nutritionally dense type of carbs that can replace refined flours and other such unhealthy carbs. You can easily find whole grain alternatives. Instead of buying the refined flour bread that you are used to, buy bread made from whole grains instead. What's good about this is that you can simply substitute whole grains for less healthy foods, while not actually having to cut out any foods from your diet completely.
